Christmas carol comes from the pagan tradition called wassailing. People would go through their villages singing to banish evil spirits. They would also go door to door to drink the health of their neighbors. The custom drink was called wassail and its ingredients included mulled ale, curdled milk which is likely why we drink mulled wines and cider at Christmas.
